Or, you can substitute 1 3/4 teaspoons (8.5 ml) of cream of tartar for this acidic ingredient. Next, use soy milk to fill up to the 1-cup line. Another way to make buttermilk is to combine 1/2 cup of water to 1/2 cup of vegan sour cream and mix together well. You can alter the proportion of water and sour cream depending on the preferred thickness. Now you can use the plant-based buttermilk in a variety of vegan recipes including muffins, pancakes, and breads.
