Start out by combining one-fourth cup (40 grams) cornmeal, one-half cup (80 grams) all-purpose flour, one tablespoon (15 grams) sugar, half a teaspoon (2 grams) of baking powder, three-fourths teaspoon (4 grams) salt, and fresh cracked pepper in a large mixing bowl. Then, add in a half-cup (120 milliliters) soymilk and whisk it all together until the mixture is smooth. Next, stir in one cup (160 grams) corn and two thinly sliced green onions, and a half-cup (60 grams) diced red bell pepper. Drop a tablespoon of vegetable oil in a frying pan and wait until it gets hot. 

Then add a spoonful of the mixture to the pan and fry for approximately two minutes on each side until it turns golden and crispy. This sweetcorn fritter dish goes well with salsa or a simple salad. Bon appétit!
