Start by making a simple ginger syrup by mixing a couple tablespoons (30 grams) of powdered ginger, one-and-a-half cups (340 grams) of organic raw or granulated sugar and about a half cup (120 milliliters) of water in a pot. Bring to a slow simmer and once the sugar dissolves and the mixture thickens, turn the heat off and let it sit for an hour or two. Strain the ginger from this liquid and now you have ginger syrup.

There are two ways to make ginger brew: the instant or the fermented way. For an instant ginger drink, simply combine three to five tablespoons (45 to 75 milliliters) of ginger syrup with soda water and serve. Although fermenting takes longer, it creates a more complex flavor. For this method, funnel 1/8 teaspoon (0.70 grams) of active yeast into a bottle. Pour in the ginger syrup, a quarter-cup (60 milliliters) of fresh citrus juice, and approximately eight cups (2 liters) of water, making sure to leave some space for gas to accumulate during fermentation. Seal the bottle with a lid and shake it up so the yeast dissolves, then store it in a dark place. Within a few days, the mixture will produce its own fizz and will be ready to drink and enjoy!
